Harvesting takes place in mid to late summer and is undertaken when fruit reaches the required maturity. Apples can also be picked for colour and size as well. Apples are picked by variety and this is dependent on the maturity, size profile and colour of the apple. Some apple varieties have two or three picks, as the smaller less mature apples are left on the tree at the first pick to ripen and grow some more, however in some instances a Manager will ask for the tree to be strip picked, i.e. leave nothing behind.
